Excellent vegetable grown for its roots, parsnips have been cultivated by humans for at least 2,000 years. Pale yellow or ivory in colour and shaped like a slightly bulbous carrot, parsnips are one of the tastiest and most appealing root vegetables. Parsnips are rich in starch, vitamins, mineral salts and essential oils.  Used for roasting and cooking parsnips are cheap and simple to prepare, their soft, fragrant, slightly sweet flesh adds a warm, comforting element to many dishes. Flavour and sweetness are increased by frost, so parsnips are better during mid or late winter. Almost any well drained soil will produce a good harvest of parsnips but the best crops are produced on rich, slightly heavy land. Parsnips should never be grown on newly or recently manured soil, this causes the roots to fork as if growing on stony ground.
