Coloured leaf version of garden kale. A highly attractive colour Curly Kale Scarlet is often used as a spot of colour in winter gardens. Curly Kale is a very useful, leafy, cabbage type vegetable which is harvested over the winter when little else is in season. The deeply curled, crimson almost purple leaves, can be eaten raw in salads, cooked or used as an ingredient in soups. Curly Kale Scarlet can also be used as a substitute for cabbage or spinach in many recipes. Pick curly kale leaves when they're still young, older leaves tend to have thicker, stringy stalks and a bitter taste. Curly kale is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium. In common with other brassicas Curly Kale Scarlet, particularly when chopped or minced contains sulforaphane a chemical believed to have potent anti-cancer properties. Boiling reduces the level of the anti-cancer compounds; however, steaming, microwaving, or stir frying do not result in any significant loss. Suitable for freezing Curly Kale Scarlet is extremely hardy and is resistant to almost any conditions the winter weather can throw at it.
