Lemon Balm “melissa officinalis”. A member of the mint family, the lemon balm plant is a member of the mint family. The plant originated in southern Europe but is now found throughout the world. As its name suggests, this leafy, green herb has a lemony flavour and fragrance and this scent together with its pretty white flowers have led to its widespread cultivation in gardens. The flowers are extremely attractive to bees. Leaves and young shoots can be harvested during the first year of cultivation and are used as a seasoning in salads, soups, meat and fish dishes. The leaves, stems, and flowers of lemon balm are all used medicinally. An infusion or tea made from the leaves is said to relieve headaches and reduce stress, it is also reported to help with flatulence. Best used fresh, it loses virtually all of its flavour when dried. The plant may die off at the start of the winter, but will shoot up again in spring. Lemon balm grows in clumps, can be very invasive and may become a nuisance in the garden, it's best to grow it in a container or in a pot sunk into the soil.
